Oops! Thanks for that Kara. I'm glad the cake worked out for you as I stuffed up the ingredients completely. It should have been 2 tsp Baking Soda and 1 tsp Baking Powder. I have edited it now. Glad you enjoyed it. I have a new chocolate cake recipe which I will be posting on here soon. It is nearly as wicked as this one, but so quick to make as all the ingredients are whizzed in the food processor - no sifting or anything and the result is fantastic!

Happy Baking :)

hi Kate

made this cake and it was a big hit. just what i was looking for in a mud cake, rich, chocolatey naughtiness :)
just a question though, in your ingredients you don't have baking soda, but in the method it pops up.
"In a large bowl, mix the sifted flour, baking powder, baking soda and cocoa with sugar."
i winged it and added a teaspoon, just in case. is that right?

I'm interested in this cake because:

1. I love frosting my cakes exactly in that manner. Piped frosting is too fussy!

2. You say it's light in texture and it's rare I find a carrot cake light in texture. I don't know why but I've never made carrot cake before. Crazy!

3. I like your reasons. Nowadays, I cook/bake according to whatever is happening in my fridge/cupboards because most days i'm too lazy to go out into the freezing nyc streets to buy ingredients :)

It's a lovely cake icing, not ultra smooth though. It's mainly used for piping or as a swirly 'roughed up' topping like on my carrot cake (that one is cream cheese icing but shows the effect).
